It’s that time again! What I Ate Wednesday. I was realizing today that my next What I Ate Wednesday is going to fall on December 25. O man. Are you guys in for a treat. I’m a kind of girl who doesn’t hold back on holidays. They only come around a few times a year and I’m a firm believer in fully indulging that day. I do despise the feeling of being really full so I try not to let myself get to that point but I definitely don’t pay attention to what I’m consuming in the day and follow my taste buds rather than my health. It’s magical. Hopefully my eats on December 25 will entertain you. For now, you’re stuck with my standard week day eats. 

wiaw5 1024x512 What I Ate Wednesday #5Breakfast was the standard spinach and feta omelette with a toasted gluten free thin bagel. I’ve been eating this at least a few times a week for months and I’m not sick of it yet. So. Good. 

Lunch was strawberries and a quinoa recipe which will be up on the blog this weekend. It was chocked full of roasted root vegetables, toasted pecans, lemon and parsley. I promise it’s a winner. 

I had an amazing navel orange and a handful of Buckwheat Snack for an afternoon snack. At this time of the year I find eating any fruit is such a gamble. Oranges are particularly tricky. You never really know what kind of orange lays beneath that skin. You can try all the standard “is this a good orange tests” but sometimes they still are just a total let down. Not really juicy, tough texture, an odd flavour. Thankfully, this orange was one of the best I’ve had in a while. So satisfying. 

Dinner was another winner. I’m a huge fan of mexican food and love making fajita salads at home. They are so simple, take 15 minutes to pull together, and are filling, nutritious, and taste unreal. This salad was a mix of lean ground beef, romaine, sautéed onions and peppers, tomato, avocado, shredded goat cheddar and salsa. I’m salivating just thinking about it. Is that weird?

      Definitely. I’m a huge fan of appetizers. My uncle always brings the most amazing cheeses for snacking on during the day. Even though I know it will kill my stomach, I just have to do it.

      I would say eating a whole bag of the buckwheat snack is entirely acceptable. I was actually impressed that it’s pretty filling too. I can’t wait for potatoes and stuffing. I just love Christmas dinner.
